Soft and Chewy Cookies

The other day I had a sudden craving for something sweet. Chocolate chip cookies to be exact. After checking my baking supplies I noticed all I had for chocolate was one block of semi-sweet with hazelnuts (works out to just 1/3 cup). At this point I am thinking I am out of luck. Then I notice the package of raisins and half package of peanuts. I really want to make cookies at this point. After all I am pregnant and have started to feel the cravings.


Because of the shortage of chocolate I used a recipe I had for chocolate chip cookies. I decreased the ingredients to half. I used both the raisins and peanuts to fill the gap in chocolate.

Here is the recipe:


        Ingredients:

6 tablespoons of softened butter
1/2 cup brown sugar (packed)
1/2 cup white granulated sugar
1 egg lightly beaten
1 and 1/8 cups all purpose flour sifted
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract
1/3 cup chopped chocolate
1/2 cup chopped nuts
1/2 cup raisins

Method:

Preheat oven to 375 F (190 C).

Lightly grease a cookie sheet with butter.

In a mixing bowl cream together butter, brown and white sugars. Add egg.

Sift flour and measure out 1 and 1/8 cups. Add this flour with remaining dry ingredients and sift once more. 


Then add to the creamed butter and sugar mixture.

Stir in vanilla.

Stir in the chocolate, nuts and raisins.
Drop by tablespoons on cookie sheet. 

Bake for about 10 to 12 minutes. Finished cookies should be lightly colored and not turned brown. 


Unused dough can be frozen for later use. Before I froze mine I shaped them and placed them on plates. By allowing them to freeze individually this would save time later. You can then store them in a container or bag in the freezer.

I made a total of 22 cookies in this recipe. These cookies turned out amazing. They stayed soft and chewy and were not overly sweet.

  2. I love chocolate chip cookies but I also like to try different things in a cookie recipe. You just never know what or how they may come out tasting. You can't go wrong if a cookies stays soft and chewy.

      I am a little embarassed to say that this the first time I had cookies that stayed soft and chewy. I am sure if they had more chocolate in them they would be even more delicious.
