Cinnamon Raisin Loaf

This recipe is delicious in its original form. I tried it and loved it. My family however love raisins in mostly anything baked. So I had to try adding those into this recipe. I only had enough to do one loaf though so I cut the ingredients in half and added raisins. Then because my hubby likes extra sweetness I swapped the white sugar in the cinnamon and sugar mixture for brown sugar. I also had to add in baking powder as our flour here does not work well without it. 

Ingredients:

For the batter:

1/2 cup butter softened
1 cup of sugar
1 egg
1 cup of milk (1 tablespoon of lemon mixed in)
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup raisins

For the cinnamon/sugar mixture:

1/3 cup brown sugar
1 teaspoon cinnamon



Method:

Cream together butter, eggs, and sugar. 

Add milk, flour, baking powder and baking soda.
Add in raisins. 

Mix well. 

Pour half the mixture in a loaf pan.

In a separate bowl mix together the cinnamon and sugar. 

Sprinkle 3/4 of the cinnamon/sugar mixture over the batter.

Pour in the remaining batter.
Sprinkle remaining cinnamon/sugar mixture.

Bake at 350 for 45 to 50 minutes or until inserted toothpick 

comes out clean. 

Cool in pan for 20 minutes before removing.

  2. It sounds and looks delicious. I love anything cinnamon raisin. I always get it for my bagels. The kids thinks I'm weird that I love "sweet" bagels but they just don't get it. :)

My hubby would love to eat raisins in almost everything I bake. Me, not so much. This recipe is a keeper! It sounds yummy for him! I am pinning to try one day. As a young stay at home mom, you are definitely doing it all! More so than when I raised my son many years ago. Don't know how you do so much but you are amazing!
