Banana Custard Recipe

Banana custard is a great way to use up overripe bananas that are just sitting on your counter. This recipe is very quick and easy to make and the perfect choice for a last minute dessert when in a hurry. Best of all there is no baking involved.


This dessert can be served either warm or cold.

Servings: 4

Ingredients:


2 teaspoons corn starch
2 cups fresh whole milk
2 tablespoons powdered sugar 
1 egg yolk 
½ teaspoon vanilla essence
3 large ripened bananas (blended)


Method:

1. In a bowl mix the cornstarch with a little 1/2 cup of cold milk until blended smooth.


2. Pour the remaining milk into a saucepan and heat. When milk becomes hot add the cornstarch mixture. Stir for about 1 to 2 minutes to allow the cornstarch to cook but not stick to the bottom. 


3. Remove from the heat and stir in the sugar. Place mixture in refrigerator and allow to cool slightly. 



4. Beat the egg yolk lightly in a small bowl. Add to mixture.
Heat and stir constantly until the custard has thickened. Do not boil. Add the blended bananas and vanilla essence. Mix well.



5. Pour the mixture into serving dishes.

Enjoy!
