Chocolate Thumbprint Shortbread Cookies

If you are looking for a cookie with just a little taste of chocolate added then this recipe will work for you. These cookies are made from scratch with ingredients you may  already have on hand. They are quick and easy to put together and your little ones can even help. The outcome of these cookies are a little crunchy texture but not hard. It is a nice treat along with a cup of coffee, tea, or a cold glass of milk.


Ingredients:

1 cup butter softened 
1 cup white sugar
1 large egg
3/8 cup milk
1/8 teaspoon salt
2 1/3 cup white flour
2 teaspoons vanilla extract
chopped unsweetened chocolate pieces

Method:

1. In a large bowl cream together butter and sugar until light and fluffy.

2. Beat in the egg. Stir in milk and vanilla.

3. Combine the flour and salt. Sift into the sugar mixture. Cover dough with plastic wrap, keeping the air out. Chill for at least one hour. Chill pans at this time.

4. Preheat oven to 400 F (200 C). Roll dough into spoon sized balls and place on pans. Use a thumb to make a small dent in each cookie. Place one piece of chocolate in each dent.

5. Bake for 8 to 10 minutes or until lightly golden brown at the edge. Remove from pans and cool.
