No-Bake Mango Delight

Mangoes are delicious just on their own. However mangoes can become very ripe in a matter of a few days. That isn’t an issue if you are only buying a few at a time. However sometimes buying them in bulk is so much more cheaper. You might even be fortunate enough to be given mangoes which was my case. Even after eating several as is we could not finish the batch before they became very ripe.
This no bake mango delight recipe is also eggless making it a wonderful cool treat even for someone with egg allergiesIngredients are very basic and most people will have them already on hand in their kitchen.
Ingredients:
30 Marie tea biscuits
3/4 cup whipped cream
3 cups finely chopped ripped mangoes
tablespoons flaked coconut for garnishing

Method:
1. In a bowl mix the cream and milk together.
2. In a wide plastic or glass dish (oval/rectangular) place the tea biscuits along the bottom.
3. Pour about 1/3 of the cream/milk mixture over the biscuits. Add 1/3 of the chopped mangoes.
4. Add a second layer of tea biscuits along with another 1/3 of the cream/milk mixture, and 1/3chopped mangoes.
5. Add the final layer of biscuits.
6. Add almost all the remaining cream/milk mixture (keep about three tablespoons to the side). Add the last of the chopped mangoes.
7. Drizzle the remaining cream/milk over the top layer of mangoes and sprinkle some coconutover.
8. Place in the refrigerator to chill for at least three hours. Slice and serve. Enjoy!
