Coconut Ladoo Recipe

Coconut Ladoo is a traditional and popular dessert of India. This no bake recipe is most often used during weddings or other festivities. It consists of only two ingredients and is very quick and easy to make. I enjoy making these when expecting last minute guests. They are very tasty and a wonderful compliment to a cup of coffee or tea.


Servings: 15 - 20 balls depending on the size of each

Ingredients:
1 tin sweetened condensed milk or (1 cup homemade sweetened condensed milk ) 
2 1/2 cups coconut flakes (keep 1/2 cup for rolling)

Method:
1. In a pan over low heat add the sweetened condensed milk and 2 cups of coconut.
2. Mix well and cook until the mixture becomes quite thick and begins to form into a ball. This may take anywhere from 6 to 10 minutes, as it depends on the temperature you are using as well as the type of pan. Test to see if mixture is ready by using a spatula. If the mixture sticks to the spatula and you are finding it difficult to stir than it is done.
3. Remove from heat. Allow to cool for about 5 minutes. Shape into balls and then roll in coconut. Store in an airtight container in refrigerator for up to 5 days.

Tips: 
* If mixture is so sticky that shaping balls is difficult coat palms with butter.
*If mixture is not sticky enough return to the pan and cook a little longer.
