Coconut Brownie Cake

Coconut Brownie Cake

If you would like to take a different spin on brownies then this may be just what you are looking for. My family likes many sweets that contain coconut.
This recipe is a standard brownie recipe with some coconut added in. So easy and very tasty.


Ingredients:

2 cups flour
1 1/2 cups sugar
3/4 cup cocoa powder
1/2 cup coconut
2 teaspoons baking powder
1 teaspoon vanilla
3 eggs 
1 cup vegetable oil
3/4 cup hot water

Method:

1. Preheat oven to 350 degrees F (175C).
2. In a large bowl, add flour, sugar, cocoa, coconut, baking powder. Stir.
3. Whisk eggs well. Add to mixture along with 
water, oil, and vanilla. Mix until well blended.
4. Spread evenly in a 9 X 9 baking pan.
5. Bake for 25 to 30 minutes. Test with toothpick to find out if it is done. 
6. Let cool before cutting into squares.

  1. Funny, I make most things from scratch (from chicken noodle soup to calzones to who knows what else) but I've always been intimidated by brownies! This seems simple enough and looks so delicious! I'm pinning it so I can bake them with my kids either tomorrow or next weekend. Thanks!

  4. How much coconut do you use? It's not in the ingredient list. Sounds like a great recipe though!

      I have updated the recipe. I am so sorry about that. I have an infant and a toddler and days are so hectic. I do read all my comments. It just takes me a while to answer back.
